Vegan Baked Sweet Potato Patties

This an easy recipe for very flavorful sweet potato patties, seasoned with curry powder, nutmeg, and for extra flavor spring onions and parsley.

Ingredients

  • 500 grams Sweet Potatoes 
  • Cup All Purpose or rice flour
  • 2 tbsp Spring Onion
  • 1 tbsp Parsley Chopped
  • ¾ tsp Salt
  • ¼ tsp Black Pepper
  • 1 Pinch Nutmeg
  • 1 Pinch Curry Powder
  • ⅓  Cup Shredded Vegan Cheese
  • 2 tbsp Cooking Olive Oil 

Instructions

  • In a pot with water, cook the whole potatoes with their skin until tender, then drain and peel the potatoes. Place the peeled potatoes in a bowl and mash using a potato masher. Set aside to cool.
  • Once cooled, add herbs, seasonings, flour, and vegan cheese and mix until just combined.
  • Form 6-8 balls of dough. Roll each ball in additional flour then gently flattening into patties.
  • Bake in a hot oven at 200C for approx. 10- 15 minutes until warm and crispy.
